ZUTATEN
Fish
- 🐟 200g yellowtail fillets (2 pieces)
Vegetables
- 🧅 15g green onion (5cm piece)
- 2 slices ginger
Seasonings
- 2 tbsp miso
- 💧 150ml water
- 3 tbsp sake
- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 1 tsp soy sauce
SCHRITTE
Slice the green onion lengthwise, remove the core, and cut into thin strips. Soak in water for 5 minutes, then drain to make shiraga-negi.
Heat water in a frying pan over medium heat. Once boiling, add the seasonings (sake, mirin, sugar, soy sauce) and ginger, stirring to combine. Add the yellowtail fillets and spoon the broth over them until their color changes. Cover with a lid and simmer on low heat for 5 minutes.
Dissolve miso into the broth, cover again, and simmer for another 5 minutes. Remove the lid and continue cooking, occasionally spooning the broth over the fish, until the liquid reduces to one-third. Plate the fish, pour the reduced broth over it, and garnish with shiraga-negi.
