    • 1 tsp salad oil

    • 1 tbsp sake
    • 1 tbsp mirin
    • 1.5 tbsp soy sauce
    • 1/2 tsp dashi powder
    • 200ml water

Trim the root of maitake mushrooms and separate them by hand. Grate the daikon radish, drain excess water, and divide into two portions.

Cut the buri into bite-sized pieces, sprinkle both sides with salt, and let sit for 10 minutes. Pat dry with paper towels and coat with potato starch.

Heat salad oil in a frying pan over medium heat. Add the buri and cook until browned on one side, then flip and cook through. Remove from the pan.

Wipe the pan clean and add the broth ingredients (sake, mirin, soy sauce, dashi powder, and water). Bring to a boil.

Add maitake mushrooms and simmer over medium heat until softened. Return the buri to the pan, add half of the grated daikon, and simmer for 1 minute.

Plate the dish, top with the remaining grated daikon and chopped green onion.
