  • Sauce

    • 1 tbsp mirin
    • 1 tbsp soy sauce
    • 50ml concentrated noodle sauce
    • 💧 150ml water

Cut the chicken thigh into bite-sized pieces and season with salt and pepper.

Trim the eggplant and cut into irregular chunks. Slice the tomato into wedges and halve them. Mince the garlic after removing its core.

Boil water in a pot and cook the somen noodles according to package instructions. Rinse under cold water to remove starch and drain well.

Heat sesame oil and garlic in a frying pan over low heat until fragrant. Add chicken and eggplant, cooking over medium-low heat for 4–5 minutes until the eggplant softens.

Add the sauce ingredients (mirin, soy sauce, noodle sauce, water) and mix. Simmer for 2–3 minutes, then add the tomato and stir briefly. Pour over the noodles and garnish with green onion.
