Main Ingredients
- 🍗 1 piece (300g) chicken thigh
- 🥚 1 boiled egg
- 🧂 Pinch of salt and pepper
- 1/2 tbsp salad oil
Tartar Sauce Ingredients
- 3 tbsp mayonnaise
- 🧂 1/4 tsp salt
Sweet Vinegar Sauce Ingredients
- 3 tbsp ponzu soy sauce
- 🍬 1/2 tbsp sugar
SCHRITTE
Chop the boiled egg into coarse pieces. Mix the egg with mayonnaise and salt in a bowl to prepare the tartar sauce.
Trim excess fat from the chicken thigh. Score the thick parts lightly and cut the thigh into two pieces. Season both sides with salt and pepper.
Heat salad oil in a frying pan over medium heat. Place the chicken skin-side down and press firmly with a spatula to ensure even browning. Cook for about 5 minutes until the skin is crispy and the edges turn white. Flip and cook on low heat for another 3 minutes until fully cooked.
Add ponzu soy sauce and sugar to the pan and bring to a boil. Simmer until the sauce thickens, flipping the chicken to coat evenly.
Slice the chicken into bite-sized pieces and plate. Drizzle with tartar sauce before serving.
