ZUTATEN
Fish
- 🐟 1 fillet mackerel (200–250g)
Vegetables
- 🥬 4 leaves lettuce
- 🍅 4 cherry tomatoes
Seasoning
- 🧂 1/4 tsp salt
- 1 tbsp sake
- As needed salad oil
Shiso Dressing
- 5 shiso leaves
- 1 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp salad oil
- 1 tbsp water
- 🍬 2 pinches sugar
Sesame Coating
- 🌾 4 tbsp white sesame seeds
- 🌾 2 tbsp flour
- 2–3 tbsp water
SCHRITTE
Pat the mackerel dry with a paper towel and remove any belly bones. Sprinkle with salt and sake, and let sit for 5 minutes. Cut the lettuce into 8mm strips, halve the cherry tomatoes, and finely chop the shiso leaves.
Mix the shiso dressing ingredients (soy sauce, vinegar, salad oil, water, sugar) in a bowl with the chopped shiso leaves.
Wipe off the excess moisture from the mackerel and cut it into 2cm wide pieces. Mix the sesame coating ingredients (white sesame, flour, water) in a tray. Coat the mackerel pieces thoroughly with the mixture.
Heat salad oil in a frying pan to a depth of 2cm at medium heat (170–180°C). Fry the mackerel pieces for 3–4 minutes, turning occasionally, until crispy. Drain excess oil.
Arrange the lettuce and cherry tomatoes on a plate, place the fried mackerel on top, and serve with the shiso dressing on the side.
