Main
- 🍗 1 piece (250g) chicken thigh
- 🥚 1 boiled egg
- 40g sliced lotus root
- 100g mizuna
- 🍅 5 cherry tomatoes
- 1 tbsp potato starch
- 1 tbsp olive oil
Dressing
- 2 tbsp mayonnaise
- 🥛 1 tbsp milk
- 1 tbsp grated parmesan cheese
- 🍋 1/2 tbsp lemon juice
- 🧂 Pinch of salt and pepper
- 🧄 Pinch of grated garlic
Chicken Seasoning
- 🧂 Pinch of salt and pepper
- 1 tsp dried basil
SCHRITTE
Cut mizuna into 3cm pieces, halve cherry tomatoes, and slice lotus root thinly. Rinse lotus root in water, pat dry, and coat with potato starch in a bag.
Quarter the boiled egg lengthwise.
Mix all dressing ingredients in a bowl.
Score thick parts of chicken thigh and season with salt, pepper, and dried basil.
Heat olive oil in a pan and fry lotus root slices until crispy. Remove and set aside.
Wipe excess oil from the pan and place chicken skin-side down. Cook on medium heat until browned, then flip and cook on low heat until fully cooked.
Slice the cooked chicken into bite-sized pieces.
Arrange mizuna, lotus root, cherry tomatoes, boiled egg, and chicken on a plate. Drizzle with Caesar dressing.
