ZUTATEN

- 🦐 50g fresh sakura shrimp
Soy Products
- 🧈 1 piece atsuage (fried tofu)
Vegetables
- 🥬 2 turnips with leaves
Seasonings
- 💧 300cc water
- 2 tbsp mirin
- 1.5 tbsp soy sauce
- 1/3 tsp dashi powder
Thickening Agent
- 1 tsp potato starch
- 💧 1 tsp water
SCHRITTE
Wipe off excess oil from the atsuage with a paper towel and cut into 6 equal pieces.
Separate the turnip leaves, peel the turnips, and cut them into quarters. Cut the leaves into 5cm pieces.
In a pot, combine the seasonings (water, mirin, soy sauce, dashi powder), atsuage, and turnips. Heat over medium heat until boiling, then cover with a drop lid and simmer over low heat for 10 minutes until the turnips are tender. Add the turnip leaves and simmer for another 2 minutes. Plate the ingredients.
Add the sakura shrimp to the pot and heat over medium heat until boiling. Reduce to low heat and simmer for 2 minutes. Add the potato starch mixture and stir over medium heat for 2 minutes until thickened. Pour the sakura shrimp sauce over the plated ingredients.
