- 🐟 200g sashimi-grade skipjack tuna
Vegetables
- 🧅 1/2 onion, thinly sliced
- 12g kaiware sprouts
Cooking Oil
- 1 tbsp salad oil
Seasonings
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 🧂 1.5 tbsp soy sauce
- 1/2 tbsp grated ginger
SCHRITTE
Thinly slice the onion and cut the kaiware sprouts in half, removing the roots.
Cut the skipjack tuna into 1.5cm wide pieces.
Mix the seasonings (sake, mirin, sugar, soy sauce, ginger) in a tray and marinate the skipjack tuna for at least 30 minutes in the refrigerator. Reserve the marinade.
Heat salad oil in a pan over medium heat, sauté the onion for 1–2 minutes, then push it to the side. Add the skipjack tuna and cook for 1–2 minutes until the surface turns white.
Flip the skipjack tuna, add the reserved marinade, and simmer for 2–3 minutes until the sauce thickens.
Plate the dish and garnish with kaiware sprouts.
