    • 🐟 2 fillets mackerel
  • Vegetables

    • 1/2 stalk white part of leek
    • 1/2 stalk green part of leek
    • 2 slices ginger
  • Seasoning

    • 🧂 Pinch of salt
    • 1 tbsp sake
    • 2 tbsp miso
    • 🌰 2 tbsp white sesame seeds
    • 💧 100 ml water
  • Simmering Sauce

    • 2 tbsp sake
    • 2 tbsp mirin
    • 🍬 1 tbsp sugar
    • 1/2 tbsp soy sauce

Make shallow cuts on the skin side of the mackerel. Sprinkle with salt and sake, let sit for 5 minutes, then pat dry with paper towels.

Cut the white part of the leek into thin strips (julienne). Slice the ginger into thin strips.

In a pot, mix the simmering sauce ingredients. Add the mackerel, green part of the leek, leek cores, and ginger. Heat until boiling, then cover with a drop lid and simmer on low heat for 10 minutes.

Add miso, sesame seeds, and water to the pot. Mix well, cover again with the drop lid, and simmer for another 5 minutes. Spoon the sauce over the mackerel while simmering until thickened.

Serve on a plate and garnish with julienned white leek.
