ZUTATEN
Vegetables
- 3 bunches mitsuba
- 100g enoki mushrooms
- 🍋 1/2 lemon
Protein
- 300g silken tofu
Seasoning
- 1 tbsp soy sauce
- 🍋 1 tbsp lemon juice
Broth
- 💧 400ml water
- 3cm kombu
- 2 tbsp sake
- 🧂 1/3 tsp salt
SCHRITTE
Cut mitsuba into 4 equal parts. Trim the root of enoki mushrooms and separate them by hand. Slice 2 thin slices of lemon and squeeze the rest. Cut tofu into 6 equal pieces.
In a pot, add the broth ingredients (water, kombu, sake, salt), tofu, and enoki mushrooms. Heat gently over low heat until warmed through. Turn off the heat, add mitsuba and lemon slices, cover, and let sit for 1 minute.
In a bowl, mix soy sauce and lemon juice together.
