- 100g pork (minced)
Fermented Foods
- 1 pack natto (40g)
Vegetables
- 400-450g grated daikon
- 🧅 Chopped green onion (to taste)
Starch
- 4 tbsp potato starch
Oil
- 1 tbsp sesame oil
Seasoning
- 1 tbsp sake
- 1 tbsp soy sauce
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1/2 tsp vinegar
SCHRITTE
Grate the daikon and drain the liquid until you have 290-300g. Mix it with 4 tbsp potato starch in a bowl. Mince the pork.
Combine sake, soy sauce, mirin, sugar, and vinegar to create the seasoning mixture.
Heat 1/2 tbsp sesame oil in a pan and stir-fry the pork until its color changes. Add natto and stir briefly, then pour in the seasoning mixture and cook until the liquid is almost gone. Add this mixture to the daikon bowl and mix well.
Wipe the pan clean and heat the remaining 1/2 tbsp sesame oil. Scoop 1/6 of the mixture with a spoon and shape it into a circle in the pan. Fry until golden brown on both sides. Serve on a plate and garnish with chopped green onions.
