ZUTATEN
Hamburg Patty
- 🐟 200g minced tuna
- 🥚 1 egg white
- 🧅 1/3 stalk green onion, chopped
- 1/2 tsp grated ginger
- 2 tbsp potato starch
- 1 tsp soy sauce
Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 1 tbsp soy sauce
Garnish
- 🧅 Chopped green onion, as needed
- 🥚 1 egg yolk
Cooking Oil
- 1/2 tbsp salad oil
SCHRITTE
Separate the egg into yolk and white.
Cut the green onion into small slices after making crosswise cuts.
Mix all 'Hamburg Patty' ingredients in a bowl. Divide into 6 portions and shape into round patties, removing air pockets.
Heat salad oil in a pan over medium heat. Add patties and cook until browned. Flip, cover, and steam on low heat for about 3 minutes.
Add 'Seasoning' ingredients to the pan and simmer, flipping the patties until they are glazed and shiny.
Plate the patties, garnish with chopped green onion and egg yolk.
