- 🍗 1 piece (250g) chicken thigh
Vegetables
- 5 pieces (250g) satoimo (Japanese taro)
- 150g lotus root
- 1/2 stalk (90g) burdock root
- 🥕 1/2 piece (75g) carrot
- 120g bamboo shoot (cooked)
- 🍄 6 dried shiitake mushrooms
- 1 piece (130g) konjac
Cooking Oil
- 1 tbsp salad oil
Seasonings
- 300cc shiitake mushroom soaking liquid
- 2 tbsp sake
- 2 tbsp mirin
- 🍬 1.5 tbsp sugar
- 🧂 1/2 tsp salt
- 1.5 tbsp light soy sauce
SCHRITTE
Prepare all vegetables by peeling and cutting them into uniform sizes. Optionally, make decorative cuts for presentation.
Rehydrate dried shiitake mushrooms in water and reserve the soaking liquid.
Heat 1 tbsp of salad oil in a large pot over medium heat. Sauté chicken thigh pieces until lightly browned.
Add all vegetables to the pot and stir-fry for 2–3 minutes.
Pour in the shiitake soaking liquid, sake, mirin, sugar, salt, and light soy sauce. Bring to a boil.
Reduce heat to low, cover, and simmer for 40 minutes or until vegetables are tender and flavors are absorbed.
Serve warm or let cool and store in the fridge for up to 3 days.
