Cut the potatoes in half, slice thinly, and soak in water. Drain lightly, place in a microwave-safe container, cover with plastic wrap, and microwave at 600W for 2 minutes. Drain the water. Remove the stem of the tomato and slice into 1cm thick rounds.

Season the pork slices with salt and pepper.

Layer 1/4 of the potatoes in a heatproof container, place 2 slices of pork on top, followed by 1/4 of the tomato slices and cheese. Repeat the layering process until all ingredients are used.

Cover with aluminum foil and bake in a toaster oven for about 10 minutes until the pork and potatoes are cooked. Remove the foil and bake for an additional 3 minutes until the cheese is golden brown. Sprinkle with parsley.
