ZUTATEN
Dough
- 250g bread flour
- 15g cocoa powder
- 🍬 35g sugar
- 🧂 4g salt
- 5g instant dry yeast
- 🥚 40g egg
- 🥛 130g milk
- 25g unsalted butter
Filling
- 🍫 16 pieces of milk chocolate (4g each)
Topping
- Powdered sugar, as needed
SCHRITTE
Combine all dough ingredients except butter in a bowl and knead for 5 minutes by hand or mixer.
Add butter and knead for 15–20 minutes until the dough becomes smooth.
Let the dough rise in a warm place (40°C) for 50 minutes for the first proofing.
Divide the dough into 16 equal pieces and shape them into balls.
Let the dough balls rest for 15 minutes for intermediate proofing.
Flatten each dough ball and place one piece of chocolate in the center. Wrap tightly.
Arrange the filled dough balls in a 20cm square pan and let them rise in a warm place (40°C) for 30 minutes for the second proofing.
Bake at 170°C for 15–20 minutes until golden brown.
After cooling, sprinkle powdered sugar on top as desired.
