Main
- 🐟 2 fillets of fresh salmon
- 1 tsp sake
- 🍄 1 pack maitake mushrooms
- 🧄 1/2 clove garlic, minced
- 🧈 10g salted butter
- Pinch of salt and pepper
- 1 tbsp vegetable oil
Batter
- 100g all-purpose flour
- 5cm grated yam
- 🥚 1 egg
- 🥬 1/8 head of cabbage, chopped
- 1 tsp Japanese dashi granules
- 💧 100ml water
White Sauce
- 🧈 10g salted butter
- 4 tsp all-purpose flour
- 🥛 100ml milk
- 1 tsp miso paste
- Pinch of black pepper
SCHRITTE
Chop cabbage and maitake mushrooms roughly. Mince garlic.
Peel and grate yam. Cut salmon into 8 pieces and sprinkle with sake.
Microwave butter in a heatproof bowl for 30 seconds at 600W. Add flour and mix well.
Gradually add milk while stirring. Cover lightly with plastic wrap and microwave for 2 minutes at 600W. Stir, add miso and black pepper, and microwave for another 30 seconds.
Heat butter and garlic in a frying pan. Add salmon and maitake mushrooms, stir-fry over medium heat, and season with salt and pepper.
Mix batter ingredients in a bowl. Add cooled salmon and mushroom mixture.
Heat vegetable oil in a frying pan. Pour half the batter, cover, and cook over medium heat for 5 minutes.
Flip and cook until fully done. Top with white sauce and black pepper. Repeat for the remaining batter.
