- 🥬 50g frozen spinach
- 🌽 50g frozen corn
Batter
- 🥚 3 eggs
- 3 tbsp olive oil
- 🥛 150ml unsweetened soy milk
- 🧀 30g grated cheese
- 🧂 1 pinch salt
- 150g rice flour
- 1 tbsp baking powder
SCHRITTE
Preheat the oven to 180°C and line a baking mold with parchment paper. Defrost spinach and corn.
Tear the smoked salmon into bite-sized pieces.
In a bowl, whisk eggs thoroughly, then add olive oil, soy milk, grated cheese, and salt. Mix well.
Sift rice flour and baking powder into the mixture and fold with a spatula until no dry flour remains.
Add smoked salmon, spinach, and corn to the batter and mix until evenly combined.
Pour the batter into the prepared mold and bake at 180°C for 30–40 minutes. Let cool before serving.
