Fish
- 🐟 2 cleaned Pacific saury (220g)
Vegetables
- 🍄 1 pack maitake mushrooms
Seasoning
- 🧂 Pinch of salt and pepper
Flour
- 🌾 1 tbsp all-purpose flour
Oil
- 1 tbsp olive oil
Sauce
- 🍬 2 tsp sugar
- 1.5 tbsp soy sauce
- 1.5 tbsp balsamic vinegar
Garnish
- 🌿 Pinch of chopped parsley
SCHRITTE
Break apart the maitake mushrooms into smaller pieces.
Cut the Pacific saury into thirds, removing the tail. Season with salt and pepper, then coat with all-purpose flour.
Heat half of the olive oil in a pan over medium heat. Add the Pacific saury and cook for 4–5 minutes per side until fully cooked. Remove and set aside.
Wipe the pan clean and heat the remaining olive oil. Add the maitake mushrooms and sauté over medium heat until softened.
Add sugar, soy sauce, and balsamic vinegar to the pan. Stir and simmer until the sauce thickens. Pour over the cooked Pacific saury and garnish with parsley.
