SCHRITTE
Cut off the stems of the shiitake mushrooms. Separate the caps and stems. Slice the caps thinly and shred the stems.
Heat sesame oil in a frying pan over medium heat. Add the shiitake mushrooms and stir-fry until coated with oil. Add sake and salted kombu, then stir-fry until well combined.
