- 150g ground chicken
- 180g daikon, sliced
- 10g raw rice
Seasoning
- 1/2 tbsp salad oil
- 🧂 1/3 tsp salt
- 1/3 tsp Japanese dashi powder
Sauce
- 1 tbsp sake
- 2 tbsp mirin
- 🍬 1 tsp sugar
- 1.5 tbsp miso
- 1 tsp cornstarch
- 💧 50ml water
Garnish
- 🧅 2 stalks chopped green onion
SCHRITTE
Slice daikon into 3cm thick rounds, peel thickly, and trim edges. Make shallow cross cuts on the surface.
Place daikon, water, and rice in a pot. Heat over medium until boiling, then simmer covered for 10 minutes. Rinse daikon to remove residue.
Place daikon, water, salt, and dashi powder in a pot. Heat over medium until boiling, then simmer covered for 15 minutes.
Mix sauce ingredients (sake, mirin, sugar, miso, cornstarch, water) in a bowl.
Heat salad oil in a pan over medium heat. Add ground chicken and cook for 2 minutes until color changes. Add sauce mixture and stir until thickened.
Plate cooked daikon, pour chicken sauce over, and garnish with chopped green onion.
