- 🍗 1 chicken thigh (200g)
- 3 taro roots
Broth
- 1/2 tsp dashi powder
- 💧 300ml water
Seasoning
- 2 tbsp sake
- 🍬 1/2 tbsp sugar
- 1 1/2 tbsp soy sauce
- 2 tbsp mirin
Garnish
- 🧅 Chopped green onion, to taste
SCHRITTE
Peel the taro roots thickly, cut into bite-sized pieces, and place them in a bowl. Sprinkle with salt (not listed in ingredients), rub to remove the sliminess, and rinse under running water.
Cut the chicken thigh into bite-sized pieces.
Place the taro in a pot, add enough water (not listed in ingredients) to cover, and boil over medium heat for about 10 minutes until a skewer can pass through. Remove from the pot and rinse the taro under running water.
Add taro, chicken thigh, water, and dashi powder to a pot. Simmer over medium heat for 5 minutes.
Add the seasoning ingredients (sake, sugar, soy sauce, mirin) to the pot. Place a drop lid and simmer over medium heat until the broth reduces by half, skimming off any foam. Serve in a dish and garnish with chopped green onion.
