SCHRITTE
Mince the green onion. Wrap the silken tofu in paper towels, place it in a microwave-safe container, and microwave at 600W for 3 minutes. Drain and let cool.
Heat salad oil in a frying pan over medium heat. Add ground pork, grated garlic, and grated ginger. Stir-fry until the pork changes color. Add doubanjiang and stir until fragrant.
Add minced green onion and stir briefly. Mix in sake, soy sauce, chicken stock powder, and water. Bring to a boil, then cover and simmer on low heat for 7–8 minutes.
Uncover, break the tofu into bite-sized pieces, and add to the pan. Simmer on medium heat for 2–3 minutes.
Add the cornstarch slurry (cornstarch mixed with water) and stir until the sauce thickens, cooking for 1–2 minutes.
Drizzle sesame oil over the dish and mix lightly.
Serve the cooked rice in bowls, top with the mapo tofu, and garnish with chopped green onion.
