ZUTATEN
Main Ingredients
- 🍗 300g chicken thigh
- 🥛 sufficient amount of milk
- 🧅 1/2 onion
- 10 perilla leaves
- sufficient amount of cooking oil
Ssamjang Sauce
- 1 tbsp doenjang
- 1 tbsp gochujang
- 🧄 1 tbsp minced garlic
- 1 tbsp mirin
- 🍯 1 tbsp honey
- 1/2 tbsp sesame oil
- a dash of black pepper
Chive Salad
- 100g chives
- 🧅 100g onion
- 1 tbsp anchovy sauce
- 🍬 1 tbsp sugar
- 1 tbsp red pepper powder
- 2 tbsp sesame oil
- a pinch of sesame seeds
SCHRITTE
Soak chicken in milk for 30 minutes to 1 hour, then rinse and pat dry.
Slice onion into thick strips.
Slice perilla leaves into 1cm wide strips.
Mix all ssamjang sauce ingredients in a large bowl.
Add chicken and vegetables to the sauce bowl, mix well, and marinate in the refrigerator for at least 30 minutes.
Heat cooking oil in a pan and cook chicken starting with the skin side down.
Once partially cooked, cut the chicken into smaller pieces and cook thoroughly.
Cut chives into 4–5cm lengths.
Thinly slice onion.
Mix anchovy sauce, sugar, red pepper powder, and sesame oil to make the salad dressing.
Combine chives and onion with the dressing, mix well, and sprinkle sesame seeds on top.
