ZUTATEN
Noodles
- 150g somen noodles
Meat
- 150g thinly sliced pork belly
Vegetables
- 茄子 2 eggplants (160g)
- 🧅 1/2 stalk green onion
- 🧄 2 cloves garlic
Seasoning
- 🧂 Pinch of salt and pepper
- 1/2 tbsp salad oil
Sauce
- 1 tbsp mirin
- 1 tbsp soy sauce
- 100cc concentrated noodle sauce
- 💧 100cc water
SCHRITTE
Cut the pork belly into bite-sized pieces and season with salt and pepper.
Prepare the vegetables: cut off the eggplant stems, halve them horizontally, and slice into six vertical pieces. Slice the green onion into thirds, remove the core, and julienne. Soak in water and drain. Thinly slice the garlic and remove the core.
Boil water in a pot and cook somen noodles according to package instructions. Rinse with cold water and drain. Plate the noodles.
Heat salad oil and garlic in a frying pan over low heat until crispy, then remove the garlic. Add pork and eggplant, stir-frying over medium heat until the eggplant softens.
Add the sauce ingredients (mirin, soy sauce, noodle sauce, and water) to the pan. Simmer for 1-2 minutes. Pour the sauce and toppings over the noodles, and garnish with green onion and crispy garlic.
