Main Ingredients
- 🍄 10 shiitake mushrooms
- 170g tofu
- 100g ground beef
- 1 green chili
- 1 red chili
- 8g flour
Meat Seasoning
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 🥚 1 egg yolk
- 🧄 1 tsp minced garlic
- Pinch of pepper
Steamed Mushroom Sauce
- 2 tbsp soy sauce
- 1 tbsp cooking wine
- 1/2 tbsp corn syrup
- 200ml water
- 2 pieces kombu
- 1 tbsp sesame oil
- 20g chopped scallion
Thickening Agent
- 1 tbsp potato starch
- 2 tbsp water
SCHRITTE
Clean shiitake mushrooms and remove stems.
Prepare green chili and red chili by deseeding and chopping finely.
Mash tofu and remove excess water using a cloth or coffee filter.
Mix ground beef, mashed tofu, egg yolk, soy sauce, sesame oil, garlic, and pepper in a bowl.
Lightly coat the inside of the mushroom caps with flour.
Fill mushroom caps with the prepared beef and tofu mixture.
Steam mushrooms for 10 minutes over medium heat.
Prepare sauce by boiling soy sauce, cooking wine, corn syrup, water, kombu, and scallion.
Thicken sauce with potato starch mixed with water.
Pour sauce over steamed mushrooms and garnish with sliced red chili.
