ZUTATEN
Vegetables
- 🧅 1/2 spring onion, sliced
- 100g komatsuna, chopped
Eggs
- 🥚 1 egg
Seasonings
- 🧂 Pinch of salt and pepper
- 1/2 tbsp mirin
- 1/2 tbsp soy sauce
Oil
- 1 tsp salad oil
SCHRITTE
Slice the spring onion into wedges and chop the komatsuna into 3–4 cm pieces, separating stems and leaves.
Beat the egg in a bowl and season with a pinch of salt and pepper.
Heat salad oil in a frying pan, add spring onion and komatsuna stems, and stir-fry until softened. Add komatsuna leaves and stir-fry briefly, then add mirin and soy sauce.
Push the vegetables to one side of the pan, pour in the egg mixture, and stir gently until semi-cooked. Mix everything together and serve.
