ZUTATEN
Dacquoise
- 🥚 100g egg whites
- 🧂 30g sugar
- 🌰 75g almond flour
- 5g cake flour
- 45g powdered sugar
- Powdered sugar for dusting
Buttercream
- 🥚 80g egg yolks
- 🧂 65g sugar
- 🥛 80g milk
- 🧈 190g butter
Additional Ingredients
- Matcha powder as needed
- Cocoa powder as needed
SCHRITTE
Whip egg whites until 70% firm, then add sugar and whip to stiff peaks.
Fold sifted dry ingredients into the meringue.
Pipe batter into caterpillar or zigzag shapes on a tray.
Dust powdered sugar evenly 2-3 times.
Bake at 180°C for 13-15 minutes, then cool and pair the bases.
Mix egg yolks and sugar quickly for 1 minute.
Heat milk (add vanilla bean if available) and mix into the yolk mixture.
Cook the mixture on low heat, stirring constantly until thickened.
Cool the cream in an ice bath to lukewarm temperature.
Whip softened butter into the cream in 2-3 additions.
Mix matcha powder with buttercream to desired taste and color.
Repeat the process with cocoa powder for chocolate buttercream.
Pipe matcha cream onto dacquoise bases, alternating with chocolate cream.
Cover with the paired dacquoise base to complete.
