- 600g pork belly block
Vegetables
- 1 stalk green onion (green part)
- 1 slice ginger
- 200g lotus root
Condiments
- 100cc sushi vinegar
- 1 tbsp salad oil
Seasonings
- 50cc sake
- 1 tbsp soy sauce
- 200cc water
SCHRITTE
Cut pork belly into 4cm cubes. Massage sushi vinegar into the pork in a bowl and let it sit for 10 minutes. Pat dry the pork and reserve the sushi vinegar.
Slice ginger thinly. Cut lotus root into bite-sized pieces, soak in water, and drain.
Heat salad oil in a frying pan over medium heat. Add pork and cook until browned, turning occasionally.
In a pot, combine pork, ginger, green onion, sake, water, and reserved sushi vinegar (excluding soy sauce). Bring to a boil, skim off foam, cover with a drop lid, and simmer on low heat for 20 minutes.
Remove the drop lid, add soy sauce and lotus root, and simmer on medium heat for another 20 minutes until glossy.
