INGREDIENTES
Seafood
- 🦪 1 can (65g) scallop flakes
Vegetable
- 1/2 bag bean sprouts
- 🥔 2 potatoes (300g)
Oil
- Enough salad oil for frying
Seasoning
- 🧂 1/4 tsp salt
- A pinch of pepper
- 🥛 1 tbsp milk
Breading
- Enough all-purpose flour
- 🥚 1 beaten egg
- Enough breadcrumbs
PASOS
Place bean sprouts in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 2 minutes. Drain excess water.
Cut potatoes into 2cm cubes and soak in water for 5 minutes. Drain and place in another microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 4 minutes. Mash the potatoes while hot and mix in scallop flakes (including the juice), salt, pepper, and milk.
Add the prepared bean sprouts to the potato mixture and mix well. Chill the mixture in the refrigerator.
Divide the mixture into 6 portions and shape each into an oval. Coat each piece in flour, then beaten egg, and finally breadcrumbs.
Heat salad oil in a pot to 170°C (about 3cm deep). Fry the croquettes until golden brown on all sides.
