INGREDIENTES
Main Ingredients
- 100g vermicelli
- 🍗 1 chicken breast (220g)
- 4 imitation crab sticks
- 1/2 bag bean sprouts
- 1 pack pea shoots (250g)
Seasoning
- 1 tbsp sake
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
- 1/2 tbsp sesame oil
Chicken Sauce
- 🍬 1 tsp sugar
- 1/2 tbsp vinegar
- 1 tbsp soy sauce
- 1/2 tsp grated ginger
- 1 tbsp ground sesame seeds
- chili oil to taste
- 2 tbsp chicken steaming liquid
PASOS
Cut the pea shoots in half and remove the roots.
Shred the imitation crab sticks.
Boil water in a pot, cut vermicelli in half with kitchen scissors, and cook until soft. Drain and set aside. Blanch the bean sprouts briefly and drain.
In the same pot, bring water to a boil, add sake and chicken breast, cover, and simmer on medium-low heat for 5 minutes. Turn off heat and let sit for 30 minutes. Reserve 2 tbsp of steaming liquid and slice the chicken.
Mix the vermicelli seasoning ingredients (sugar, soy sauce, sesame oil) in a bowl.
Mix the chicken sauce ingredients (sugar, vinegar, soy sauce, ginger, sesame seeds, chili oil, steaming liquid) in another bowl.
Mash the pea shoots lightly with a spatula in a bowl. Add vermicelli, bean sprouts, imitation crab sticks, and the vermicelli seasoning. Toss well.
Plate the vermicelli salad, top with sliced chicken, and drizzle the chicken sauce over.
