INGREDIENTES
Fish
- 🐟 4 sardines, gutted
- 🧂 Pinch of salt and pepper
- Sufficient amount of flour
Cooking Oil
- 1 tbsp olive oil
Butter
- 🧈 10g salted butter
Seasoning
- 1 tbsp sake
Sauce
- 1 tbsp sake
- 🧈 10g salted butter
- 1/2 tbsp soy sauce
PASOS
Prepare the sardines by removing the backbone and cleaning them thoroughly. Use a knife to trim the belly bones.
Sprinkle sake over the sardines and let them sit for 5 minutes. Pat dry with kitchen paper, season with salt and pepper, and coat with flour.
Heat olive oil in a pan over medium heat. Place the sardines skin-side down and cook until golden. Flip and continue cooking. Remove excess oil with kitchen paper, add butter, and baste the sardines until fully cooked. Plate the sardines.
Clean the pan and add the sauce ingredients (sake, butter, soy sauce). Simmer until fragrant and slightly thickened. Pour over the sardines.
