Place the chicken tenderloin vertically, cut into the thick part to open it, and divide into 4 equal pieces. Place in a bowl and massage with sake, salt, pepper, and potato starch.

Dip one sheet of rice paper briefly in water and place it rough side up. Add one shiso leaf, 1/6 of the chicken, and half a slice of cheese. Fold the rice paper tightly, ensuring no air pockets. Repeat for all 6 rolls.

Heat 1cm of salad oil in a frying pan to 170°C. Fry the rolls for 4–5 minutes, turning occasionally, until the chicken is cooked and the surface is crispy.
