  • Sauce

    • 1 tbsp sake
    • 1 tbsp mirin
    • 🍬 1 tsp sugar
    • 🧂 1 tbsp soy sauce

Cut off the stems of the shiitake mushrooms and finely chop them. Make decorative cross cuts on the caps. Cut the melting cheese slices in half.

In a bowl, mix minced pork, chopped shiitake stems, potato starch, sake, and a pinch of salt and pepper until well combined.

Dust the inside of the mushroom caps with potato starch, place folded cheese slices inside, and top with the pork mixture. Shape neatly.

Heat salad oil in a frying pan over medium heat. Place the mushrooms meat-side down and cook until browned. Flip, cover, and steam on low heat for 3 minutes. Add the sauce ingredients and stir until glossy.
