INGREDIENTES

- 🍗 250g chicken thigh
- 150g fresh bracken
- 1 tbsp salad oil
Bracken Preparation
- 💧 600cc water
- 1/2 tsp baking soda
Seasoning
- 1 tbsp sake
- 2 tbsp mirin
- 🍬 1 tsp sugar
- 🧂 2 tbsp soy sauce
- 💧 150cc water
PASOS
Wash the bracken and trim the hard root ends. Boil 600cc water in a large pot, turn off the heat, and mix in baking soda. Let the bracken soak in the mixture for 6–8 hours. Rinse thoroughly, drain, and cut into bite-sized pieces.
Cut the chicken thigh into bite-sized pieces.
Heat salad oil in a frying pan over medium heat. Place the chicken skin-side down and cook until both sides are browned. Add all seasoning ingredients and bring to a boil. Cover and simmer on low heat for 5 minutes.
Add the prepared bracken to the pan and bring to a boil again. Simmer over medium heat for 5 minutes, occasionally spooning the sauce over the bracken.
