INGREDIENTES
Pasta / Noodles
- 🍝 100g macaroni
Chicken
- 🍗 125g chicken thigh
Mushroom
- 🍄 1/2 pack shimeji mushrooms
Vegetables
- 🧅 1/2 onion, sliced
Seasoning
- 🧂 Pinch of salt and pepper
Cheese / Dairy
- 🧈 20g salted butter
- 🧀 50g pizza cheese
Herbs
- 🌿 Pinch of chopped parsley
Sauce
- 🧂 50g mentaiko
- 3 tbsp all-purpose flour
- 🥛 400ml unsweetened soy milk
- 🧂 1/3 tsp salt
PASOS
Trim the root of the shimeji mushrooms and separate them. Slice the onion thinly.
Cut open the mentaiko and extract the contents.
Cut the chicken into bite-sized pieces and season with salt and pepper.
Heat butter in a frying pan, place chicken skin-side down, and cook until browned on both sides. Add shimeji mushrooms and onion, and sauté until softened.
Add flour to the pan and stir until no longer powdery. Gradually add soy milk, stirring until slightly thickened. Mix in mentaiko and salt.
Boil macaroni according to package instructions, drain, and mix into the sauce.
Transfer the mixture to a heatproof dish, top with pizza cheese, and bake in a toaster oven for 5–8 minutes until golden brown. Garnish with parsley.
