INGREDIENTES
Protein
- 🍗 1 piece (250g) chicken thigh
Vegetables
- 🧅 1/2 onion (100g)
- 🍄 1/2 pack (50g) shimeji mushrooms
Seasoning
- 🧂 A pinch of salt and pepper
- 🌿 A pinch of chopped parsley
Cooking Oil
- 1 tbsp salad oil
Sauce
- 1 tbsp sake
- 1 1/2 tbsp miso
- 🍅 200cc unsalted tomato juice
PASOS
Remove the core of the onion and slice into 1cm widths. Trim the root of the shimeji mushrooms and separate them.
Cut the chicken into bite-sized pieces and season with salt and pepper.
Heat salad oil in a frying pan over medium heat. Place the chicken skin-side down and cook until both sides are browned. Add the onion and shimeji mushrooms, and stir until coated with oil.
Add the sauce ingredients (sake, miso, tomato juice), mix well, and bring to a boil. Cover and simmer on low heat for 6–7 minutes until the chicken is cooked through.
Serve on a plate and garnish with chopped parsley.
