  • Chicken

    • 🍗 250g chicken thigh
    • 🥚 1 beaten egg
    • 🧂 Pinch of salt and pepper
    • 🌾 2 tbsp all-purpose flour
    • Enough vegetable oil for frying
  • Ume Tartar Sauce

    • 🥚 1 boiled egg
    • 5 pickled plums (20g)
    • 2 shiso leaves
    • 🥪 3 tbsp mayonnaise
    • 🧂 Pinch of pepper
  • Nanban Sauce

    • 1 tbsp mirin
    • 🍬 1 tsp sugar
    • 🍶 1 tbsp vinegar
    • 🥢 1 tbsp soy sauce

Remove the seeds from the pickled plums and finely chop them. Finely chop the shiso leaves.

Finely chop the boiled egg.

Trim excess fat and tendons from the chicken thigh and cut into large bite-sized pieces. Season with salt and pepper, then coat evenly with flour.

Mix all the ingredients for the tartar sauce (☆) in a bowl.

Heat the mirin in a microwave-safe container (uncovered) at 600W for 30 seconds. Add the remaining nanban sauce ingredients (★) and mix well.

Heat vegetable oil in a pot to 170°C. Dip each piece of chicken into the beaten egg and fry for 3 minutes on one side. Flip and fry for another 3 minutes until cooked through. Remove and drain excess oil.

Plate the fried chicken, drizzle with nanban sauce, and top with ume tartar sauce.
