INGREDIENTES
Main Ingredients
- 2 handfuls somen noodles
- 🥒 2 zucchinis
- 🧅 1/4 onion
- 🧂 1/2 tbsp salt
- 3 tbsp sesame seeds
- 1 tbsp sesame oil
- 50 ml water
- 1 tbsp cooking oil
- 1 tbsp chili powder
- 🧄 1/2 tbsp minced garlic
- 2 tbsp soy sauce
- 1 tbsp plum extract
- 🧂 A pinch of salt
- A pinch of black pepper
PASOS
Prepare all ingredients.
Slice zucchinis into thin rounds (0.3–0.4 cm thick) and julienne them.
Mix zucchini slices with 1/2 tbsp salt and let them sit for 10 minutes.
Flip and mix the zucchini halfway through the salting process.
Drain the zucchini using a sieve and pat dry with a kitchen towel.
Grind sesame seeds finely.
Prepare the seasoning mix in a small bowl.
Heat cooking oil in a wok over high heat.
Add salted zucchini and julienned onion to the wok and stir-fry for 2 minutes.
Add the seasoning mix to the stir-fried vegetables and cook for 1 more minute.
Pour 50 ml water into the wok and stir-fry for another minute. Finish with sesame oil.
Let the stir-fried zucchini cool slightly.
Boil 10 cups of water in a pot and cook somen noodles for 4 minutes.
Drain and rinse the cooked noodles under cold water.
Arrange stir-fried zucchini in the center of a large plate.
Roll small portions of noodles and place them around the zucchini.
Sprinkle ground sesame seeds on top.
