INGREDIENTES
Main
- 🍗 150g chicken thigh
- 🧅 1/2 onion (100g)
- 🥒 1/2 zucchini (85g)
- 🍄 1 king oyster mushroom (40g)
- 1/2 tbsp olive oil
- 🧂 Pinch of salt and pepper
Soup Base
- 1/2 tsp consomme
- 🧂 1/2 tsp salt
- 💧 400ml water
- 🧂 Pinch of pepper
PASOS
Cut the onion into 1.5cm cubes, zucchini into 2cm slices, and king oyster mushroom into 2cm slices.
Cut the chicken thigh into 3cm cubes and season with salt and pepper.
Heat olive oil in a pot over medium heat, add chicken, and sauté until the color changes. Add onion and cook until translucent. Then add zucchini and mushroom, stirring until coated with oil.
Add the soup base ingredients, bring to a boil, skim off any foam, reduce heat to low, cover, and simmer for 5 minutes until the chicken is cooked through.
