INGREDIENTES
Vegetables
- 🍆 1 medium eggplant
- 🧅 1/8 onion
- 🍄 2 mushrooms
- 🍅 2 cherry tomatoes
- 🌽 1 tbsp corn kernels
Dairy
- 🧀 2 handfuls of pizza cheese
Seasonings
- 5 tbsp tomato sauce
- 1 tbsp olive oil
- 🧂 A pinch of salt
- A pinch of pepper
PASOS
Prepare all the ingredients.
Slice the eggplant into 0.5–1 cm thick pieces without detaching the stem.
Place the eggplant slices on a baking tray lined with parchment paper.
Slice the onion, cherry tomatoes, and mushrooms.
Season the vegetables with a pinch of salt, pepper, and 1 tbsp of olive oil.
Spread tomato sauce on the eggplant slices and layer with onion, cherry tomatoes, mushrooms, and corn kernels.
Top with 2 handfuls of pizza cheese.
Bake in a preheated oven at 180°C (356°F) for 10 minutes.
