INGREDIENTES
Noodles
- 2 servings cooked udon noodles
Meat
- 150g sliced beef
Vegetables
- 1/3 stalk green onion, sliced
- 2 shiitake mushrooms, sliced
Seasoning
- 🧂 Pinch of salt
- 1 tbsp sugar
- 1/2 tbsp salad oil
Sauce
- 1 tbsp sake
- 2 tbsp mirin
- 2 tbsp soy sauce
- 1/2 tsp dashi powder
- 500ml water
Topping
- 🥚 2 egg whites
- 🥚 2 egg yolks
- 🧂 Pinch of salt
PASOS
Slice the green onion diagonally into thin slices and remove the stems of the shiitake mushrooms, slicing them into 5mm pieces.
In a bowl, add egg whites and a pinch of salt, then whisk until stiff peaks form.
Season the beef with salt. Heat salad oil in a pot over medium heat, add the beef, and stir-fry until lightly browned. Add sugar and stir-fry for 1 minute.
Add green onion, shiitake mushrooms, and stir-fry briefly. Pour in the sauce ingredients (sake, mirin, soy sauce, dashi powder, and water). Bring to a boil, skim off any foam, and add the udon noodles. Cook according to package instructions.
Divide the udon into two bowls. Top each with half of the whipped egg whites and place one egg yolk on top of each. Serve immediately.
