INGREDIENTES

- 120g boiled octopus
Vegetables
- 🥒 2 cucumbers
- 1/2 piece ginger
Seasonings
- 🍬 1 tbsp sugar
- 🧂 1/4 tsp salt
- 2 tbsp vinegar
- 1/2 tbsp white miso
PASOS
Peel one cucumber partially with a peeler to create stripes, then slice thinly. Sprinkle with 1/3 tsp salt (not listed in ingredients), let sit for 5 minutes until softened, rinse with water, and squeeze out excess moisture.
Grate the remaining cucumber and lightly squeeze out excess water. Cut the ginger into thin strips.
Cut the boiled octopus into bite-sized pieces.
In a bowl, mix the seasonings (sugar, salt, vinegar, and white miso). Add the grated cucumber and mix well.
Add the sliced cucumber and octopus to the bowl and toss to combine. Plate the salad and garnish with ginger strips.
