INGREDIENTES

- 🐟 1 whole mackerel
- 2 tbsp cornstarch
- 🧂 a pinch of salt
- a pinch of pepper
Seasoning
- 4 tbsp soy sauce
- 4 tbsp mirin
- 🧄 3 cloves garlic
- 🧅 a small amount of green onion
- 🧅 1/4 onion
- 🍬 1 tbsp sugar
- 💧 2/3 cup water
- 1 tbsp corn syrup
PASOS
Prepare the mackerel by cleaning it thoroughly. If salted, soak it briefly in rice water to remove excess salt and odor. Cut into serving-sized pieces.
Pat the mackerel dry and coat it evenly with cornstarch by shaking it in a plastic bag.
Heat a pan with a small amount of oil and pan-fry the mackerel until golden brown on both sides.
Prepare the teriyaki sauce by combining soy sauce, mirin, garlic, green onion, onion, sugar, and water in a saucepan. Bring it to a boil.
Pour 1/3 of the sauce over the mackerel and simmer. Repeat this process twice more, allowing the sauce to reduce each time.
Add corn syrup during the final addition of the sauce to give the dish a glossy finish.
