    • 1.5 tbsp concentrated soy sauce
    • 💧 Enough water to fill to 1-cup mark

    • 🧅 Chopped green onion, as needed

Slice ginger thinly. Cut burdock root into thin shavings and soak in water to remove bitterness.

Cut off the head and tail of the Pacific saury, then sprinkle with salt.

Line a frying pan with aluminum foil, place the saury, and grill over medium heat until golden brown on both sides.

In a rice cooker, add soaked rice, soy sauce, and water up to the 1-cup mark. Mix well and flatten the rice. Layer ginger, burdock, and grilled saury on top, then cook as usual.

After cooking, remove the saury, discard bones and innards, then return the fish to the rice cooker and mix gently.
