    • 200g yellowtail fillets
  • Vegetables

    • 1 piece ginger, grated
    • 100g sweet potato, sliced
  • Oil

    • 1 tsp salad oil
  • Marinade

    • 1 tbsp sake
    • 2 tbsp mirin
    • 2 tbsp soy sauce

Grate the ginger. Cut the sweet potato lengthwise in half, then slice into 1cm thick pieces. Soak in water and drain.

Pat the yellowtail fillets dry with a paper towel.

Place ginger, marinade ingredients, and yellowtail in a plastic bag. Massage gently to coat the fish. Seal the bag and refrigerate for 15–20 minutes.

Heat salad oil in a frying pan over medium heat. Add sweet potato slices and cook. Add the marinated yellowtail, draining excess marinade, and cook on low heat for 3–4 minutes until browned.

Flip the yellowtail and sweet potato slices. Cook for another 2–3 minutes until fully cooked.
