- 1/2 tbsp sake
- 🧂 Pinch of salt
Fish
- 🐟 70g horse mackerel fillet
- 1/2 tbsp salad oil

- 1 myoga, thinly sliced
- 8g ginger, julienned
Seasoning

PASOS
Remove the skin from the horse mackerel fillet.
Slice shiso leaves, thinly slice myoga, and julienne ginger.
Add soaked rice to the rice cooker, pour water slightly below the 1-cup mark, then mix in sake and salt. Spread ginger on top and cook as usual.
Heat salad oil in a pan, cook horse mackerel fillet on medium-low heat until browned and cooked through. Add mirin, sugar, and soy sauce, then break the fish into pieces while simmering for 3–4 minutes until the sauce thickens.
Once rice is cooked, mix in the cooked horse mackerel and myoga, then let it steam on 'keep warm' mode for 15 minutes. Add shiso leaves and sesame seeds, then gently mix.
