PASOS
Insert your fingers into the body of the squid and detach the muscles connecting the body and the innards. Slowly pull out the innards along with the tentacles.
Remove the cartilage from inside the body by pulling it out. Rinse the body quickly under water to remove any remaining innards.
For the tentacles, cut below the eyes and remove the beak located at the center of the tentacle base. Open the tentacles and trim the long ones to match the shorter ones. Cut off the tips of all tentacles slightly.
To peel the skin, insert your thumb between the fin and the body and slide it to detach the fin. Use a kitchen paper to peel off the skin starting from the detached area.
Lay the body flat with the cartilage side up and cut open the body lengthwise using a knife. Use kitchen paper to lightly remove the thin inner skin and trim the edges for a neat finish.
