INGREDIENTES
Fish
- 🐟 4 fillets horse mackerel (140g)
Vegetables
- 4 shishito peppers
Condiments
- 1 pickled plum

- 1 tbsp all-purpose flour
- 1/2 tbsp salad oil
Seasonings
- 1 tbsp sake
- 2 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1 tbsp soy sauce
PASOS
Cut off the stems of the shishito peppers.
Remove the seed from the pickled plum and mash it into a paste.
Pat the horse mackerel fillets dry with paper towels and coat both sides with flour.
Heat salad oil in a frying pan over medium heat, add shishito peppers, and sauté until browned. Remove and set aside.
In the same pan, place the horse mackerel fillets skin-side down and cook over medium heat until browned. Flip and cook for another 2 minutes.
Add sake, mirin, sugar, soy sauce, and mashed plum to the pan. Stir and spoon the sauce over the fillets while simmering.
Plate the fillets and garnish with the sautéed shishito peppers.
