INGREDIENTES
Meat
- 200g ground meat (beef and pork mix)
Vegetables
- 🧅 1/4 onion, minced (50g)
- 50g shimeji mushrooms
- 50g enoki mushrooms
Oil
- 1/2 tbsp salad oil
Meat Mixture Seasoning
- 3 tbsp breadcrumbs
- 🥛 3 tbsp milk
- 🧂 1/3 tsp salt
- Pinch of pepper
Mushroom Sauce Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 🧂 1/4 tsp salt
- 1 tsp soy sauce
- 1/2 tsp Japanese dashi powder
- 150ml water
Thickening Agent
- 1/2 tbsp cornstarch
- 1 tbsp water
Garnish
- Chopped green onion, as needed
PASOS
Mince the onion. Trim and separate the shimeji mushrooms. Trim and cut the enoki mushrooms into thirds.
In a bowl, mix breadcrumbs and milk until moist. Add ground meat, minced onion, salt, and pepper. Mix thoroughly until sticky. Divide into two portions and shape into oval patties.
Heat salad oil in a frying pan over medium heat. Cook the patties for 2–3 minutes on each side until browned. Remove excess oil with a paper towel.
Add mushroom sauce ingredients (sake, mirin, salt, soy sauce, dashi powder, water) to the pan and bring to a boil. Add mushrooms and stir lightly. Cover and simmer on low heat for 10 minutes.
Remove the patties from the pan. Add cornstarch slurry (cornstarch and water) to the sauce and stir over medium heat until thickened.
Plate the patties, pour mushroom sauce over them, and garnish with chopped green onions.
