    • 🍗 1 piece (250g) chicken thigh

    • 🥚 2 beaten eggs
  • Flour

    • 2 tbsp all-purpose flour
    • 2 tbsp potato starch
  • Oil

    • Salad oil, as needed
  • Seasoning

    • 1 tbsp sake
    • 1 tbsp soy sauce
    • 1/2 tsp grated garlic
    • 1/2 tsp grated ginger
    • 1/2 tsp sesame oil
  • Sauce

    • 200ml water
    • 1/2 tsp Japanese dashi powder
    • 1 tbsp sake
    • 1 tbsp mirin
    • 🍬 1 tbsp sugar
    • 2 tbsp soy sauce

Pat dry the chicken thigh and cut into bite-sized pieces.

Place chicken in a bag with sake, soy sauce, garlic, ginger, and sesame oil. Massage and marinate for 15 minutes.

Add flour and potato starch to the bag and coat the chicken evenly.

Heat oil to 170°C and fry chicken for 4 minutes. Remove and let rest for 3 minutes. Heat oil to 180°C and fry again until crispy.

In a pan, bring onion and sauce ingredients (water, dashi, sake, mirin, sugar, soy sauce) to a boil.

Add fried chicken and pour beaten eggs over. Cook until eggs are semi-set.
